Caramelized-Onion & Cheese Focaccia Wedges
Makes 8 servings
Ingredients
- 3 - Tablespoon butter

2 - medium onions, sliced

1 - round Focaccia breads (10 to 12 inches in diameter), cut
horizontally in half

8 - slices (1 ounces each) provolone or Colby-Monterey Jack
cheese
Directions
Preheat oven to 350ºF.
- In a large skillet over medium to low heat, melt butter.
- Add
in the onions and sauté, stirring occasionally, 15 to 20
minutes or until onions are brown and caramelized.
- When done,
remove from heat.
- Place half of the cheese on bottom half of Focaccia bread.

Top with onions and remaining cheese.
- Replace top half of
Focaccia.
- Wrap tightly in aluminum foil.
- Bake 15 to 20 minutes
or until cheese is melted.
- Allow to cool 5 minutes.
- Cut into 8
wedges and serve.
