Deli Beef and Pumpernickel Sandwich

Ingredients

• 1 - cup vinegar-based coleslaw

• 4 - teaspoons Dijon mustard

• 8 - slices pumpernickel bread, toasted

• 24 - slices shaved roast beef

• 24 - thin cucumber slices

Directions

1. In a small mixing bowl, add coleslaw and mustard. 

2. Mix and spread onto 1 of the toast slices.

3. Top with meat, cucumbers and remaining toast slice.
