Hot Denver Scramble Sandwich

Makes 4 sandwiches

Ingredients

• 1 - Tablespoon shortening
• 1 - Tablespoon butter or margarine
• 1/4 - cup onion, minced
• 1/4 - cup green bell pepper, minced
• 4 - eggs
• 1/2 - cup cooked ham, mined
• 1/4 - teaspoon salt
• 1/8 - teaspoon pepper
• 8 - slices sourdough bread, toasted & buttered

Directions

1. In a skillet, add the shortening and butter or margarine. 
2. When melted add the onion and bell pepper and cook until onion is tender. 
3. In a mixing bowl, beat eggs, stir in the ham, salt, and pepper. 
4. Pour egg mixture into the skillet.
5. Cook over low heat until egg sets. 
6. Cut the mixture into fourths and turn to cook both sides.
7. Serve between the toasted sourdough bread.
