Italian Sausage Onion and Roquefort Sandwich
Makes 6 servings.

Onion and Roquefort Dressing
1 med. onion, sliced thinly
4 ounces Roquefort or blue cheese, crumbled
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon chives, chopped
1 teaspoon fresh parsley

1 package (19.76 ounces) Fresh Italian Sausage Links
6 hoagie rolls
1/2 teaspoon garlic, minced
1 tablespoon steak sauce
1/4 teaspoon salt
1/4 teaspoon ground pepper

  • In a medium-mixing bowl, add the onion, blue cheese, olive oil, red wine vinegar, chives, parsley, garlic, steak sauce, salt, and pepper. 
  • Mix, cover, and place in refrigerator. 
  • Marinate for 2 hours or more.
  • Grill sausage according to package directions. 
  • Place one grilled sausage on the bottom half of a hoagie roll and top with Onion and Roquefort mix. 
  • Broil until cheese starts to melt and finish with top half of roll. 
  • Serve warm.
