Toasted Jalapeno Egg Salad Sandwich

Makes 4 sandwichesSandwich Recipes from AlansKitchen.com

Prep Time: 20 minutes

Ingredients

  • 6 - hard-cooked eggs, peeled & diced

  • 1/3 - cup real bacon bits

  • 1/3 - cup sour cream

  • 1/2 - teaspoon Dijon mustard

  • 2-1/2 - teaspoon jalapenos, chopped and drained

  • 3 - teaspoons fresh chives, chopped

  • 1 - Tablespoon red onions, chopped

  • 1/4 - teaspoon salt

  • 1/8 - teaspoon black pepper

  • 1/2 - cup shredded Cheddar cheese

  • 8 - sliced sourdough bread, toasted

Directions

  1. In a mixing bowl, add the eggs, bacon, sour cream, Dijon mustard, jalapenos, chives, red onion, salt and pepper.  Mix coarsely; you do not want the mixture fine.

  2. Take a tablespoon and spread egg salad on 4 toasted slices of sourdough bread.  Sprinkle the cheese over the bottom half. 

  3. Place top slices on the egg salad and cut into halves.  Place on dish and serve.
