Seedless Grapes & Egg Salad with Almonds Sandwich

Makes 4 sandwiches.

Prep Time: 15 minutes

Ingredients

6 - hard-cooked eggs, peeled & diced

1/3 - cup celery diced

1/2 - cup mayonnaise

3 - tablespoons seedless grapes, cut in half

1 - tablespoon almonds, chopped

1 - tablespoon lemon juice

1/4 - teaspoon salt

1/8 - teaspoon white pepper

8 - slices cracked wheat bread

Directions

  1. In a mixing bowl, add the eggs, celery, mayonnaise, grapes, almonds, lemon juice, salt, and white pepper. 
  2. Using a tablespoon, place the egg salad on bottom slice of wheat bread.
  3. Place the top slice of bread on bottom. 
  4. Using a sharp knife cut bread in half and place on plate.
