Pineapple
and Egg Salad Sandwich
Makes 4 sandwiches.

Ingredients

- hard-cooked eggs, peeled &
diced

- cup celery
diced
1/2
- cup mayonnaise

- tablespoons pineapple,
diced & drained

- tablespoon lemon juice
1/4
- teaspoon salt
1/8
- teaspoon white pepper
8
- slices nine-grain bread
Directions
- In a mixing
bowl, add the eggs, celery,
mayonnaise, pineapple, lemon juice, salt, and white pepper.
- Using a tablespoon, place the egg salad on bottom
slice of nine-grain bread.
- Place the top slice of bread on bottom.
- Using a sharp knife cut bread in half and place
on plate.
