Eggs ‘N’ Things Salad Sandwich
Makes 4 sandwiches.
6 - hard cooked eggs, peeled & diced
1/2 - cup red onions, diced
1/2 - cup salad dressing
1/4 - cup cooked broccoli, diced
1/4 - cup sautéed mushrooms, diced
1 - teaspoon lemon juice
1/2 - teaspoon oregano
1/2 - teaspoon basil
1/2 - teaspoon salt
1/8 - teaspoon pepper
1/4 - cup Cheddar cheese, shredded
1/4 - cup Monterey Jack cheese, shredded
8 - slices toasted nine-grain bread
- In a mixing bowl, add the eggs, onion, salad dressing,
broccoli, mushrooms, lemon juice, oregano, basil, salt, and
pepper.
- Using a tablespoon, place the egg salad on bottom slice
of nine-grain bread.
- Sprinkle egg salad with cheeses and place
under broiler until melted about 2 minutes.
- Place the top slice of bread on bottom.
- Using a sharp knife
cut bread in half and place on plate.
