Green Chiles Egg Salad Sandwich
Makes
4 sandwiches.
6 - hard cooked eggs, peeled & diced
1/3 - cup celery diced
1/2 - cup mayonnaise
1/8 - cup roasted green chiles, diced
2 - teaspoons lemon juice
1/4 - teaspoon dry mustard
1/4 - teaspoon dried oregano
1/4 - teaspoon salt
1/8 - teaspoon white pepper
1 - tomato, sliced (8 slices)
4 - Romaine lettuce leaves, finely shredded
8 - slices whole wheat bread
- In a mixing bowl, add the eggs, celery, mayonnaise,
Pimientos, lemon juice, dry mustard, Worcestershire sauce, salt,
white pepper, and Cayenne.
- Using a tablespoon, place the egg salad on bottom slice of
whole wheat bread.
- Next, layer on with 2 tomato slices and
lettuce. Place the top slice of bread on bottom.
- Using a sharp knife cut bread in half and place on plate.
