South of the Border Pork & Bean BurritosSandwich Recipes from AlansKitchen.com

Makes: 6 burritos

Prep: 10 minutes
Cook: 15 minutes

Ingredients:

  •       1  Tablespoon vegetable oil
  • 1 1/2  pounds boneless pork chops or pork roast, cut into strips
  •       1  jar (16 ounces) Picante Sauce
  •       1  can (about 15 ounces) pinto beans or black beans, rinsed and drained
  •       6  flour tortillas (10-inch), warmed
  •           Shredded Cheddar cheese or shredded Mexican cheese blend
  •           Guacamole
  •           Chopped tomato

Directions:

  1. Heat the oil in a 12-inch skillet over medium-high heat.

  2. Add the pork and cook until it's browned, stirring often.

  3. Stir the picante sauce and beans in the skillet and heat to a boil. Reduce the heat to low and cook for 5 minutes.

  4. Divide the pork mixture and cheese among the tortillas.

  5. Top with the guacamole and tomatoes, if desired.

  6. Fold the sides of the tortilla over the filling and fold up the ends to enclose the filling.
