Ingredients

  • 4 - Boneless Skinless Breast Fillets
  • salt and pepper to taste
  • 4  - flour tortillas (10 inch)
  • 1 - package (8 ounce) Neufchatel cheese 
  • 1 - can (8 ounce) mandarin oranges, drained
  • 1 - can (8 ounce) pineapple tidbits, drained
  • 2 green onions, chopped
  • 1/2 cup diced red bell pepper
  • 1/2 cup salted cashews, chopped

Directions

Spray a skillet with vegetable spray. To chicken, sprinkle with salt and pepper.

  1. Heat skillet over medium heat. Brown chicken breasts well on both sides, about 4 minutes per side, or until cooked through.
  2. Remove from skillet and set aside.
  3. Spread tortillas evenly with cream cheese.
  4. Cut chicken into small pieces and divide between the tortillas, leaving about 1-1/2 inches of tortilla uncovered on one side.
  5. Top chicken with Mandarin oranges, pineapple, green onions, bell peppers and cashews.
  6. Roll up tightly.
  7. Wrap tightly in plastic wrap and refrigerate for about 30 minutes before serving.
