Ingredients

Sauce

  • 1 - Tablespoon butter
  • 1 - onion, sliced into thin rings
  • 1 - teaspoon garlic powder
  • 4 - Boneless Skinless Breast Fillets
  • 1/2 - cup red wine
  • 1 - teaspoon dried rosemary
  • 1/4 - teaspoon dried thyme
  • 4 - slices Swiss cheese
  • 4 - English muffins, split and toasted

Directions

Preheat the grill for high heat.

  1. Melt the butter in a skillet over medium heat.
  2. Place the onion slices in the skillet, sprinkle with garlic powder, and sauté until onions are translucent.
  3. Remove from heat, and set aside.
  4. Lightly oil the grill grate.
  5. Place the chicken breast halves on the grill, and sprinkle with wine, rosemary, and thyme. Cook for about 8 minutes.
  6. Turn, and continue cooking 8 minutes, or until juices run clear.
  7. Place a slice of cheese on each breast half, and top with sautéed onion mixture.
  8. Cook until cheese starts to melt.
  9. Serve on English muffins.
