Ingredients
- 4 - fresh boneless,
skinless chicken breasts
1/2 - cup blue
cheese dressing
1/4 - cup flour
1/4 - cup butter, melted or 1/4 cup margarine, melted
1 - tablespoon hot pepper sauce
4 - lettuce leaves
4 - Kaiser rolls, split and lightly toasted
Directions
- Use layers of plastic
wrap or waxed paper and place chicken between them.
- Using
a rolling pin or meat mallet, pound the chicken lightly to
flatten slightly.
Place 3 tablespoons
dressing in shallow dish or pie plate; reserve remaining
dressing for sandwiches.
- Coat chicken lightly with
dressing; dip in flour to coat.
- Melt butter in a large
nonstick skillet over medium heat.
- Add chicken to skillet;
turn to coat.
- Cook, turning to brown evenly, 10 minutes or
until done (internal temp 170°F).
- Remove skillet from
heat. Remove chicken from skillet.
- Drain butter from skillet
except for 1 tablespoon; add hot pepper sauce and stir to
mix with butter.
- Return to heat.
- Add chicken; turn to
coat.
- Cook chicken 1 to 2 minutes per side to set pepper
sauce mixture.
- Serve chicken on toasted
buns with lettuce.
- Top with remaining blue cheese
dressing.
- Refrigerate leftovers.
