Ooey-Gooey Turkey Sandwiches
Makes 4 servings.

1 - package cranberries, fresh (12 ounces)
1 - cup apricots, dried
1 - orange, seeded and quartered
1/2 - cup pecans
1/2 - cup sugar
12 - ounces hickory-smoked turkey breast, sliced
1/3 - cup cream cheese, reduced-fat, softened (Neufchatel)
8 - slices bread, rye or pumpernickel
green leaf lettuce as needed
- Make sandwich topping by placing cranberries, apricots, orange,
pecans and sugar in your food processor; pulse until coarsely
- Bring together the sandwiches by spreading 4 of the turkey breast
slices with cream cheese, and layering on the turkey, sandwich
topping, lettuce and remaining slice of bread for each.
