Turkey - Cranberry Relish SandwichesPrep Time: 10 min.
Cooking Time: 10 min.

Ingredients

  • 1 - package Turkey Breast Cutlets
  • 1 - Tablespoon olive oil
  • 1 - medium orange, seeded and quartered, or 1 can (11 ounce) mandarin oranges, drained
  • 1 - can (16 ounce) whole berry cranberry sauce
  • 1 - package (6 ounce) dried apricots, chopped
  • 2 - Tablespoons sugar
  • 1/3 - cup pecans, finely chopped
  • 1/2 - cup plain whipped cream cheese
  • 4 - wheat buns
  • 4 - leaves green lettuce

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Cook turkey for 5 minutes on each side or until no longer pink and internal temperature reaches 170°F.
  3. In a medium bowl, mix oranges, cranberry sauce, apricots, sugar and pecans.
  4. Spread cream cheese on bottom of buns.
  5. Layer on lettuce, turkey and cranberry mixture.
  6. Top with remaining bun.
