Ingredients
- 1 - package Turkey
Breast Cutlets
- 1 - Tablespoon olive
oil
- 1 - medium orange,
seeded and quartered, or 1 can (11 ounce) mandarin
oranges, drained
- 1 - can (16 ounce)
whole berry cranberry sauce
- 1 - package (6 ounce)
dried apricots, chopped
- 2 - Tablespoons sugar
- 1/3 - cup pecans,
finely chopped
- 1/2 - cup plain
whipped cream cheese
- 4 - wheat buns
- 4 - leaves green
lettuce
Directions
- Heat oil in a large
nonstick skillet over medium-high heat.
- Cook turkey for 5
minutes on each side or until no longer pink and
internal temperature reaches 170°F.
- In a medium bowl, mix
oranges, cranberry sauce, apricots, sugar and pecans.
- Spread cream cheese on
bottom of buns.
- Layer on lettuce,
turkey and cranberry mixture.
- Top with remaining
bun.
