Zesty Turkey Pesto Sandwich
Makes 8 sandwiches

Ingredients

• 2/3 - cup prepared pesto
• 1/2 - cup mayonnaise
• 1/2 - cup roasted red pepper, drained, chopped
• 8 - soft bakery buns, split
• 8 - leaf lettuce leaves
• 1 - pound thinly sliced deli turkey breast
• 8 - slices (3/4-ounce) Deli American or Provolone Cheese
• 8 - slices tomato

Directions

1. In a small bowl, stir together pesto, mayonnaise and red pepper. Mix well.
2. Spread cut-sides of buns with pesto mixture.
3. To make sandwiches, you want to layer bottom half of each bun with 1 lettuce leaf, 1/4 turkey, 1 slice cheese, 1 slice tomato and top half of bun.
