Turkey Melts with Apple-Pepper Relish
Turkey Melts with Apple-Pepper RelishMakes 4 sandwiches

Ingredients:

  • Relish Ingredients:
    • 3/4 - cup chopped apple
    • 3/4 - cup chopped roasted red bell pepper, drained
    • 1/4 - cup sliced green onions
    • 1 - Tablespoon red wine vinegar
    • 1 - Tablespoon olive or vegetable oil
    • 1/8 - teaspoon salt
    • 1/8 - teaspoon red pepper
    • 1/4 - teaspoon finely chopped fresh garlic
  • Sandwich Ingredients:
    • 4 - large slices French bread or Vienna bread, lightly toasted
    • 8 - teaspoons mayonnaise
    • 12 - ounces thinly sliced cooked turkey breast
    • 12 - slices (2-3/4x1-1/8x1/4-inch) Cheddar Cheese

Directions

  1. In a medium bowl, you want to stir together apple, bell pepper, green onions, wine vinegar, oil, salt, pepper, and garlic. Set aside.
  2. Place bread slices on baking sheet and spread each with 2 teaspoons mayonnaise.
  3. To assemble each sandwich, layer bread slice with 1/4 turkey, 1/4 cup relish and 3 slices cheese.
  4. Heat broiler.
  5. Broil sandwiches 5 to 6 inches from heat for 1 to 2 minutes or until cheese is melted.
  6. Top with remaining relish.

Alan’s Kitchen Tip: Red bell pepper can be purchased already roasted. To roast your own, cut a large red bell pepper in half lengthwise; remove seeds. Place pepper, cut-side down, on broiler pan. Broil 5 to 6 inches from heat for 8 to 10 minutes or until skin is blackened. Wrap roasted pepper halves in damp paper towel and place in plastic bag. Cool. Peel skin from pepper halves; discard. Use roasted pepper as directed in recipe.
