Turkey & Mediterranean Melt

Cooking Time: 4 min.

Ingredients:

  • 8 - slices marble rye or rye bread
  • 4 - teaspoons Dijon-style mustard
  • 8 - slices (1-ounce) Deli American Cheese
  • 20 - spinach leaves
  • 8 - ounces thinly sliced deli peppered turkey
  • 8 - strips roasted red bell pepper

Directions:

  1. Spread 1 side of 4 bread slices with 1 teaspoon mustard each.
  2. Layer each with 1 slice cheese, 5 spinach leaves, 1/4 turkey, 2 bell pepper strips, 1 slice cheese and remaining bread slices.
  3. Spray sandwiches with no-stick cooking spray.
  4. Preheat 12-inch skillet over medium heat. Place 2 sandwiches into skillet.
  5. Cook, turning once, for 4 to 6 minutes or until sandwiches are golden brown and cheese is melted.
  6. Repeat with remaining sandwiches.
