Turkey Cinnamon Waldorf Sandwiches
Makes 4 servings.

Prep Time: 10 minutes
Cooling Time: 1 hour

1-1/4 - cups white turkey breast tenderloins, cooked and cubed
1 - small red apple, chopped
1/4 - cup celery, diced
3 - Tablespoon fat-free mayonnaise
2 - Tablespoons plain non-fat yogurt
2 - Tablespoons walnuts, chopped
1 - Tablespoon raisins
1/8 - teaspoon ground nutmeg
1/8 - teaspoon ground cinnamon
8 - slices raisin bread
4 - leaf lettuce leaves
8 - slices cinnamon bread

  • In a large bowl, add the turkey, apple, celery, mayonnaise, yogurt, walnuts, raisins, nutmeg and cinnamon. 
  • Mix. 
  • Cover and refrigerate for 1 hour.
  • Toast bread on light setting in the toaster.
  • Spoon 3/4 cup of the mixture onto 4 slices of bread; top with a lettuce leaf and remaining bread.
