Turkey Muffuletta
Makes 6 servings.
Prep Time: 10 minutes
Cooking Time: 5 minutes
Ingredients
1/4 - cup olive oil
1 - clove garlic, minced
6 - ounces artichoke hearts, drained
6 - ounces black olives, pitted
1/2 - cup pimiento stuffed green olives
2 - Tablespoons lemon juice
1 - Tablespoon capers, drained
1 - teaspoon oregano
1/4 to 1/2 - teaspoon cayenne pepper
1/2 - teaspoon black pepper
1 - round loaf, sturdy peasant bread
8 - ounces oven-prepared turkey breast
8 - ounces provolone, thin sliced
Directions
- In a saucepan over low heat, add the olive oil and
garlic and sauté until fragrant.
- In a food processor, add the artichoke hearts, black
olives, green olives, lemon juice, capers, oregano,
cayenne, black pepper, and garlic oil mixture.
- Pulse to
form a coarse relish.
- You may keep this in the
refrigerated at this point.
- Assemble the sandwich by spreading half the relish over
the bottom of the bread, then half the turkey, and half
the provolone.
- Repeat the layering and press sandwich together.
