Orange-Tuna Pocket Sandwiches

- 2 cans (about 7
ounces each) tuna, drained and flaked
- 1 orange -grated
cut into bite-size pieces, and drained
- 1/2 cup
- 1/4 cup chopped
- 6 loaves pocket
bread (6-inch each), cut in half
leaves, cut into thin strips
- In a bowl, combine the tuna, orange peel, orange pieces,
mayonnaise, and green onions.
- Spoon about 1/4 cup of the tuna mixture in the pocket of
each bread half, fill with spinach.
