Shanghai Salmon BLT
Makes 4 servings.

1 - can (14.75 ounces) pink salmon, drained and flaked
1/2 - cup dry breadcrumbs
6 - green onions, chopped
1 - egg
3 - Tablespoons soy sauce
1 - Tablespoon lemon juice
2 - teaspoons sesame oil
3 - cloves garlic, minced, divided
2 - Tablespoons olive oil, divided
1/2 - cup mayonnaise
1 - Tablespoon wasabi powder or paste
8 - slices sesame seed bread, lightly toasted
1 - large tomato, thinly sliced
8 - slices bacon, halved and cooked until crisp
4 - leaf lettuce leave

  • In a medium-mixing bowl, add the salmon, breadcrumbs, green onions, egg, soy sauce, lemon juice, sesame oil and 2 cloves garlic. 
  • Shape into 4 patties, formed to fit the bread.
  • In a large skillet at medium heat, add 1 tablespoon oil and cook patties until golden brown and heated through, for 4 to 5 minutes per side.
  • In a mixing bowl, whisk together the mayonnaise, wasabi powder, 1 tablespoon olive oil and 1 clove garlic. 
  • Spread mayonnaise on 1 side of each slice of bread. 
  • Top 4 slices bread with tomato, then a salmon patty, 2 pieces bacon, lettuce and remaining bread.
