Caramelized-Onion and Cheese Focaccia Wedges
Makes 8 servings
Ingredients:

3 - Tablespoons butter
-
2 - medium onions, sliced

1 - round Focaccia breads (10 to 12 inches in diameter), cut
horizontally in half

8 - slices (1 ounces each) provolone or Colby-Monterey Jack
cheese
Directions:
Preheat oven to 350ºF.

In a large skillet over medium to low heat,
melt butter.

Add in the onions and sauté, stirring
occasionally, 15 to 20 minutes or until onions are brown and
caramelized.

When done, remove from heat.

Place half of the cheese on bottom half of
Focaccia bread.

Top with onions and remaining cheese.

Replace
top half of Focaccia.

Wrap tightly in aluminum foil.

Bake 15 to 20 minutes or until cheese is
melted. Allow to cool 5 minutes.

Cut into 8 wedges and serve.
