Lamb Shanks Roasted Vegetables

Ingredients:

Cooking Directions:

  1. Rub lamb with garlic and season with salt and pepper.

  2. In a fry pan, brown shanks in hot oil.  Place onion, carrots, and celery in the bottom of 3 to 4-1/2 quart slow cooker. 

  3. Add meat, bay leaves, oregano, thyme, wine, tomatoes, and lemon juice.  Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours.
