Kelly's Cranberry Pork Roast

Prep Time: 15 min
Cooking Time: 6 to 8 hrs + 10 min

Ingredients:

  • 2-1/2 - 3  pounds boneless rolled pork loin roast
  • 1      can (16-ounce) jelled cranberry sauce
  • 1/2   cup sugar
  • 1/2   cup cranberry juice
  • 1      teaspoon dry mustard
  • 1/4   teaspoon ground cloves
  • 2      Tablespoons cornstarch
  • 2      Tablespoons cold water
  • 1      teaspoon salt

Directions:

  1. Place roast in slow cooker.
  2. In a bowl, combine cranberry sauce, sugar, cranberry juice, mustard, and cloves.
  3. Pour cranberry mixture over roast.
  4. Cover and cook on LOW for 6 to 8 hours or until meat is tender.
  5. Remove roast and keep warm.
  6. Skim fat from juices. Measure 2-cups (adding water if necessary).
  7. Pour into saucepan and bring to a boil over medium heat.
  8. In a mixing bowl, combine cornstarch and cold water to make a paste. Stir into gravy.
  9. Cook and stir until thickened. Season with salt.
  10. Serve with sliced pork.
