Tracy's Tangy Pork Chops

Prep Time: 15 min
Cooking Time: LOW 5 to 6 hrs + HIGH 30 min

Ingredients:

  • 4      (1/2-inch thick) pork chops
  • 1/2   teaspoon salt
  • 1/8   teaspoon pepper
  • 2      medium onions, chopped
  • 2      celery ribs, chopped
  • 1      large green bell pepper, sliced
  • 1      can (14-1/2-ounce) stewed tomatoes
  • 1/2   cup ketchup
  • 2      Tablespoons cider vinegar
  • 2      Tablespoons brown sugar
  • 2      Tablespoons Worcestershire sauce
  • 1      Tablespoon lemon juice
  • 1      beef bouillon cube
  • 2      Tablespoon cornstarch
  • 2      Tablespoons water

Directions:

  1. In slow cooker, place chops. Sprinkle with salt and pepper.

  2. Add onions, celery, bell pepper, and tomatoes.

  3. In a bowl, combine ketchup, vinegar, brown sugar, Worcestershire sauce, lemon juice, and bouillon.

  4. Pour over vegetables in slow cooker.

  5. Cover and cook on LOW for 5 to 6 hours.

  6. In a small bowl, combine cornstarch and water until smooth. Stir in slow cooker.

  7. Cover and cook on HIGH for 30 minutes or until thickened.

  8. Serve over rice, if desired.
