Rolled Pork Tenderloin and Sweet Potatoes for Two
Makes 2 servings.

Prep Time: 20 Minutes
Cooking Time: LOW 4 to 5 hours

2 - Tablespoon brown sugar
1/2 - teaspoon Caribbean jerk seasoning
1 - (3/4-pound) pork tenderloin
1 - small apple, thinly sliced
2 - Tablespoon sweetened dried cranberries
1 - large (1-pound) dark-orange sweet potato, peeled, cut into 1/2-inch-thick slices
2 - Tablespoon water
2 - teaspoon all-purpose flour
Salt & pepper to taste

  • Spray 2 1/2- to 3 1/2-quart slow cooker with cooking spray. 
  • In small bowl, stir together brown sugar and Caribbean jerk seasoning.
  • Place your pork tenderloin between sheets of waxed paper and pound until 1/2 inch thick. 
  • Sprinkle with 1 teaspoon of the brown sugar mixture.
  • Top evenly with apple slices and cranberries. Starting with one short side, roll up and tight with string.
  • In slow cooker, you want to add in the sweet potato slices.
  • Next, top with pork roll. Sprinkle with remaining brown sugar mixture.
  • Cover and cook on LOW for 4 to 5 hours. 
  • About 5 minutes before serving, in 1-cup microwave safe measuring cup, you will stir together water and flour.
  • Then, remove the pork to cutting board.
  • Place the sweet potatoes to serving platter. 
  • Stir juices from slow cooker into flour mixture.
  • Microwave on High for 30 to 60 seconds, stirring once, until mixture boils and thickens slightly.
  • Cut pork into slices; place over sweet potatoes. 
  • Pour sauce over top. 
  • Add salt and pepper.
