Pork Tenderloin and Sweet Potatoes for Two

Cooking Time: LOW 4 to 5 hours
2 - Tablespoon brown sugar
1/2 - teaspoon Caribbean jerk seasoning
1 - (3/4-pound) pork tenderloin
1 - small apple, thinly sliced
2 - Tablespoon sweetened dried cranberries
1 - large (1-pound) dark-orange sweet potato, peeled, cut into
2 - Tablespoon water
2 - teaspoon all-purpose flour
Salt & pepper to taste
Spray 2 1/2- to 3 1/2-quart slow
cooker with cooking spray.
In small bowl, stir together brown
sugar and Caribbean jerk seasoning.
Place your pork tenderloin between
sheets of waxed paper and pound until 1/2 inch thick. Sprinkle with 1 teaspoon of the
brown sugar mixture.

sweet potatoes. Pour sauce over top. Add salt and pepper.
