Turkey Fajita Wrap

Makes 8 servingsSlow Cooker Recipes from AlansKitchen.com

Prep Time: 15 min.
Cooking Time: HIGH for 4 hrs.

Ingredients:

  • 3 - turkey tenderloins (about 2 pounds)

  • 1 - envelope (1-1/2-ounce) taco seasoning

  • 1 - celery rib (chopped)

  • 1 - onion (chopped)

  • 1 - can (12-1/2-ounce) mild diced tomato and green chiles (undrained)

  • 1 - cup (4-ounces) reduced-fat shredded Cheddar cheese

  • 8 - flour (7-1/2-inch) tortillas

  • Toppings: shredded lettuce, light sour cream, sliced olives, chopped tomato

Directions:

  1. Cut turkey into 2-1/2-inch strips.  Place in a heavy-duty zip-top plastic bag.  Add taco seasoning.  Seal and shake to coat.

  2. In a 2-1/2-quart slow cooker, place turkey, celery, and onion. Stir in the diced tomato and green chiles.  Cover and cook on HIGH for 4 hours.  

  3. Stir in cheese.  Warm tortillas.  Spoon turkey fajitas in center of each tortilla.  Top with desired toppings and roll up.
