Boneless Chicken Cacciatore

Prep Time: 15 minutes
Cooking Time: LOW 5 to 7 hours or HIGH 2 to 3 hours

Ingredients:

  • 1/2 - cup olive oil
  • 6 - boneless chicken breasts (sliced in halt)
  • 1 - cup yellow onion, coarsely chopped
  • 4 - jars (8-ounces) tomato basil or other marinara sauce
  • 2 - teaspoons dried oregano, crushed
  • 2 - teaspoons dried thyme, crushed
  • 2 - teaspoons salt
  • 2 - teaspoons black pepper
  • 2 - teaspoons garlic, minced
  • 1 - can (6-ounces) sliced mushrooms
  • 1/4 - cup dry red wine (optional)
  • 1 - cup green bell peppers, coarsely chopped

Directions:

  1. In a frying pan over medium-high heat, add olive oil and chicken.
  2. Brown chicken.
  3. Into slow cooker add the onion, basil, oregano, thyme, salt, pepper, garlic, mushrooms, wine, and bell peppers.
  4. Place the chicken on top.
  5. Cover and cook on LOW for 5 to 7 hours or on HIGH for 2 to 3 hours.
