Bean & Chicken Chili
Makes 6
servings.
Prep Time: 15 minutes
Cooking Time: LOW 8 – 10 hours or HIGH 4 – 6 hours
1 - pound Great Northern beans,
soaked
2 - pounds skinless, boneless chicken breasts
1 - medium onion, chopped
3 - cloves garlic, minced
2 - cans (4 ounces) green chilies
2 - teaspoons ground cumin
1 - teaspoon dried oregano
1/2 - teaspoon salt
1 - can (14-1/2 ounces) reduced-sodium chicken broth
1 - cup water
- In medium pan, add beans and cover
with water.
- Bring to boil; reduce heat and
allow to simmer 20 minutes.
- Drain and discard water.
- Cut chicken into 1-inch
pieces.
- In a skillet, brown chicken, if
desired.
- Put beans, chicken, onion, garlic,
chilies, cumin, oregano, salt, broth, and water in the 3 to 4-1/2
quart slow cooker.
- Stir to mix thoroughly.
- Cover; cook on LOW for 8 to
10 hours or on HIGH for 4 to 6 hours.
