Asian Sweet & Sour Shrimp

Makes 6 servings Slow Cooker Recipes from AlansKitchen.com

Cook Time: 4-6 hours on LOW or 2-3 hours on HIGH
Slow Cooker: 4 - 4.5 Quarts

Ingredients:

  • 13 - ounces canned pineapple, drained (reserve 1/2 cup of the juice)

  • 2 celery ribs, sliced

  • 2 - medium tomatoes, cut into small wedges

  • 1 - cup broccoli florets

  • 1 - medium yellow onion, chopped

  • 1 - cup chicken broth

  • 3 - cloves garlic, minced

  • 3 - Tablespoons sugar

  • 1 - Tablespoon white vinegar

  • 2 - teaspoons fish sauce, optional

  • 2 - teaspoons soy sauce

  • 1/2 - teaspoon fresh ginger, minced

  • 1/2 - pound medium shrimp, peeled and deveined

  • 2 - Tablespoons cornstarch

  • 1/3 - cup water

Directions:

  1. Combine pineapple, celery ribs, tomatoes, broccoli florets, yellow onion, chicken broth, cloves garlic, sugar, white vinegar, fish sauce, soy sauce, and fresh ginger in slow cooker.  Cover and cook on LOW for 4 to 6 hours (or on HIGH for 2 to 3 hours).

  2. During the final 30 minutes of cooking, add the shrimp.  Set the slow cooker to HIGH.

  3. Whisk together the cornstarch and water and add to the sauce in the slow cooker. Stir to blend until the sauce is thickened and hot throughout.  Serve over jasmine, white or brown rice for a complete meal.
