Signature Chipotle Chili
Makes 6 to 8 servings

Cooking Time: LOW 6 to 8 hours or HIGH 2 to 4 hours
Ingredients
1/4 - teaspoon olive oil
3 - pounds ground beef
1 - can beef broth
1 - teaspoon oregano
3 - teaspoons chili powder
1 - teaspoon cumin
5 - garlic cloves
5 - dashes hot sauce
1 - can (12 ounces) tomato paste
1 - teaspoon salt
1 - teaspoon black pepper
1 - teaspoon cayenne pepper
1 - red bell pepper, diced
1 - green bell pepper, diced
2 - Serrano chili peppers, minced
2 - Chipotle peppers in adobo sauce, chopped
1 - long chili pepper, diced
2 - cans (28 ounces) crushed Italian
tomatoes
2 - cans (12 ounces) pinto beans,
drained and rinsed
2 - cans (12 ounces) red kidney beans, drained and rinsed Optional
garnishes:
- Shredded Cheddar cheese
- Chopped avocados
- Sour cream
- Chopped fresh cilantro
Directions
- In frying pan at medium heat, add
ground beef and brown.
- Drain fat.
- In the slow cooker, add browned ground
beef.
- Add beef broth, oregano, chili powder,
cumin, garlic, hot sauce, tomato paste, salt, black pepper,
cayenne pepper, red bell pepper, green bell pepper, Serrano
chili peppers, Chipotle peppers, long
chili pepper, crushed Italian
tomatoes, pinto beans, and
red kidney beans.
- Cover and cook on LOW for 6 to 8 hours
or HIGH for 2 to 4 hours.
- Stir occasionally and mix well before
serving.
- Garnish as you desire.
