Classic Slow Cooker
Manhattan Clam Chowder
Makes 6 servings

Cooking Time: LOW 6 – 8 hours
2 - slices bacon, cut
into 1/2-inch pieces
1/2 - cup
onion, chopped
1/2 - cup
celery, chopped
1 - can
(14-1/2-ounces) whole peeled tomatoes, undrained and crushed
1 - can
(14-1/2-ounces) whole new potatoes, drained and cubed
1 - bottle
(8-ounces) bottle clam juice
1 - can
(6-1/2-ounces) chopped clams, drained and rinsed
2 -
Tablespoons fresh parsley, chopped
1/4 -
teaspoon thyme
1/8 -
teaspoon pepper
1/8 -
teaspoon garlic powder
- In large saucepan, fry bacon until crisp.
- Add onion and celery sauté until tender.
- Add to 3-quart or larger slow cooker.
- Into slow cooker, stir in tomatoes, corn,
potatoes, clam juice, clams, parsley, thyme, pepper and garlic
powder.
- Cook on LOW 6 to 8 hours.
