Zucchini Italian Sausage Stew
Makes 8 servings
(1 cup each).
Prep Time: 10 minutes
Cooking Time: LOW 8 – 10 hours or HIGH 4 – 6 hours
1-1/4 - pounds mild Italian sausage, cut
into 1-inch chunks
1 - package (16-ounces) frozen Italian-style vegetables
2 - medium zucchini, sliced
1 - can (26.5-ounce) four cheese spaghetti sauce
1 - can (28-ounces) diced tomatoes in juice, undrained
1 - can (6 ounces) tomato paste
- Brown sausage in large skillet until
no longer pink; drain.
- In slow cooker, add combine sausage,
vegetables, zucchini, steak, pasta sauce, tomatoes and tomato paste
and mix.
- Cook on LOW setting for 8 to 10
hours or on HIGH setting for 4 to 6 hours.
- Stir before serving.
