of the Border Casserole
Makes 6 servings.
Prep Time: 10 minutes
Cooking Time: LOW 5 hours
1 - can (28 ounces) crushed tomatoes,
with juice
1 - jar (14-1/2 ounces) salsa (any flavor)
1 - can (6 ounces) tomato paste
2 - cans (15 ounces) black beans, rinsed and drained
1 - can (15-1/4 ounces) sweet corn, drained
2 - chili peppers, sliced
1 - teaspoon cumin
1 - teaspoon garlic powder
5 - tortillas
- In a large bowl, mix the tomatoes,
salsa, tomato paste, beans, corn, chili peppers, cumin and garlic
powder. Mix well.
- Place about 1 cup of this mixture in
the bottom of the 3 to 4-1/2 quart slow cooker and spread
evenly.
- Top this with one tortilla and cut it
to fit if necessary.
- Spread with 1/3 of the remaining
mixture.
- Repeat these layers, ending when there
is no liquid mixture left.
- Cook on LOW for 5 hours.
