Goulash
Soup
Makes 4 to 6 servings.
2 –
pounds stewing beef, cut into 1-1/2-inch
chunks
1 –
tablespoon flour
1 –
teaspoon salt
2 –
teaspoons Hungarian paprika (hot or
sweet)
1/8 –
teaspoon cayenne pepper
2 –
tablespoons olive oil
1 –
onion, chopped
1 – clove
garlic, chopped
1 – green
bell pepper, chopped
1 –
teaspoon tomato paste
1/2 -
cup dry red wine
1 –
pint sour cream
- Into a paper bag,
add meat, flour, salt, paprika, and cayenne and shake until meat is well
coated.
- Heat oil in a heavy
skillet. Sauté the onions, garlic, bell pepper, and tomato paste a
few minutes. Remove and set
aside. Add the meat and brown.
Add wine. Re-add back in
the sauté onion mixture. Simmer
about 1-1/2 hours or until meat is tender.
- Stir in the sour
cream, cover, and simmer for an additional 10 minutes. Serve
with hot noodles.

Heat (on stove or in microwave) and pour into a thermos.
When you get to the picnic or tailgate site, just pour and enjoy.
