15-Minute Albondigas Soup
Soup, Stew & Chowder Recipes from AlansKitchen.comMakes 4 (1-3/4 cup) servings

Prep Time: 15 minutes

Cooking Time: 10 minutes

Ingredients

  • 2 - cans (14 ounces each) ready-to-serve beef broth
  • 2 - cup frozen corn
  • 1 - cup prepared salsa
  • 1 - package fully-cooked beef meatballs
  • Tortilla chips (garnish)
  • Cilantro, chopped (garnish)

Directions

  1. In medium saucepan over medium heat, you will add the beef broth, corn and salsa. 
  2. Bring to a boil and simmer for 5 minutes.
  3. For now, microwave meatballs according to package directions.
  4. Then add the meatballs to soup mixture and serve. 
  5. Garnish with crumbled tortilla chips or chopped cilantro.

Picnicking & Tailgating

Heat (on stove or in microwave) and pour into a thermos.  When you get to the picnic or tailgate site, just pour and enjoy.
