Wendy Kims Chicken Soup
By
reader Wendy Kims
She wrote, “I make this for my friends
and relatives when they need a healthy pick me up.”
Chicken stock made from boiled chicken
parts and garlic, bay leaf, celery seeds, thyme, and rosemary. I take the chicken and bones out of the stock, pick the
chicken off the bones then add it back into the stock with lots of FROZEN
vegetables (peas, corn, broccoli and green beans) and fresh carrots. I
also add more uncooked chicken (boneless / skinless chicken breasts work
best). I let this simmer until
the newly added chicken is cooked completely. I then add egg noodles and
cook until the noodles are done. This does not take long... I follow the directions on the
noodle recipe for how long they need to cook."
This freezes really well and makes a great
feel better package for friends (and family)."
This is my special recipe... My husband
LOVES this soup / stew. The
best part is that one can add any vegetables and more meat any time to make
it last a little longer. (This
also works well with beef.)"
Picnicking
& Tailgating
Heat (on stove or in microwave) and pour into a thermos.
When you get to the picnic or tailgate site, just pour and enjoy.
