Aurora Beef with Onions
Serves 4 to 6 servings

Ingredients:

• 2 - Tablespoons butter

• 3 - large onions, finely chopped

• 2 - Tablespoons flour

• 2 - cups beef stock

• 1 - Tablespoon vinegar

• 1 - teaspoon kosher salt

• 1/2 - teaspoon freshly ground pepper

• 2 - pounds stew beef

Directions:

1. In a stock pot, melt butter and add onions.  You want to sauté the onions quickly.  

2. Add flour and blend smoothly, simmer gently, thinning with stock and vinegar.  

3. Next, add the salt and pepper and bring to a boil.

4. Add beef, and reduce heat to simmer.  

5. Cook for 1 hour or until the meat tender.
