Southern Home CookingSauté Flank Steak
Makes 4 to 6 servings

Prep Time: 15 min.
Cooking Time: 25 min.

Ingredients:

  • 1 - medium onion (chopped)
  • 2 - Tablespoons butter
  • 1 - medium flank steak (sliced on the bias into 1/2-inch strips
  • Flour
  • 1 - teaspoon dry mustard
  • 1 - Tablespoon vinegar
  • 1 - teaspoon salt
  • 1 - teaspoon paprika
  • Dash cayenne
  • 2 - cups water

Directions:

  1. In a heavy skillet, sauté the onion in the butter.
  2. Dredge the steak slices in the flour fry them quickly in the same skillet, remove and set aside.
  3. Add to the same skillet, 1 Tablespoon flour, mustard, vinegar, salt, paprika, and cayenne.  
  4. Stir, add the water, and stir again.
  5. Add the meat slices to the sauce, cover and simmer about 15 minutes.
