Raisin Oatmeal Cookies
Southern Home CookingMakes 2 dozen

Prep Time: 10 min.
Chilling Time: 8 hrs.
Baking Time: 12 min. (per batch)

Ingredients:

  • 1 - cup butter or margarine (softened)

  • 1 - cup sugar

  • 1 - cup brown sugar (firmly packed)

  • 2 - large eggs

  • 2 - cups self-rising flour

  • 2 - teaspoons ground cinnamon

  • 3 - cups uncooked regular oats

  • 1 - cup raisins

  • 1 - cup pecans (chopped)

Directions:

  1. With an electric mixer at medium speed, beat butter or margarine, sugar, and brown sugar until fluffy.

  2. Add eggs, beating until blended.

  3. Gradually add flour and ground cinnamon (beating at low speed) until blended.

  4. You want to stir in oats, raisins, and pecans.  Cover and chill dough for 8 hours.

Preheat oven to 400° F.

  1. Divide dough into 2 equal portions.  Roll each portion into a 12-inch log.

  2. Cut each log into 1-inch-thick slices.  Place slices on ungreased baking sheets.

  3. Bake for 12 minute or until gold brown.

  4. Remove to wire racks to cool.
