Spicy Oatmeal Cookies
Makes
7 dozen
Prep Time: 10 min.
Baking Time: 10 min. (per batch)
Ingredients:

1/2 - cup shortening
-
1-1/2 - cups sugar
-
1/2 - cup molasses
-
2 - large eggs
-
1-3/4 - cups all-purpose
flour
-
1 - teaspoon baking
soda

1 - teaspoon salt
-
1 - teaspoon ground
cinnamon

2 - cups uncooked regular
oats
-
1-1/2 - cups raisins
-
3/4 - cups pecans
(chopped)
Directions:
Preheat oven to 350°
F. Lightly grease baking sheets.

With an electric mixer
at medium speed, beat shortening, sugar, and molasses
until fluffy.

Add egg, beating until
blended.

Gradually add flour,
baking soda, salt, ground cinnamon, (beating at low speed) until
blended.

Add to shortening mixture,
beating until blended.
-
You want to stir in
oats, raisins, and pecans.
-
Using a tablespoon, drop
onto baking sheets.
-
Bake for 10 minute or
until gold brown.

Remove to wire racks to
cool.
