Lemmon-Basil Butter Cookies
Makes
about 36-1/2 dozen cookies
Prep Time: 20 min.
Baking Time: 10 min. (per batch)
Ingredients:
- 1 - cup fresh lemon-basil
leaves
- 1-3/4 - cups sugar (divided)
- 1 - pound butter (softened)
- 1/4 - cup lemon juice
- 1 - large egg
- 6 - cups all-purpose flour
- Lemon-Basil spring (Garnish)
- Lemon wedges (Garnish)
Directions:
Preheat oven to 350°F.
Lightly grease baking sheets.
- In a food processor, process
lemon-basil leaves and 1/4-cup sugar until blended.
- With an electric mixer at
medium speed, beat butter until creamy.
- Gradually add remaining
1-1/2 cups sugar (beating well).
- Add lemon juice and egg,
beat until blended.
- Gradually add flour and
basil mixture, beating until blended.
- Shape dough into 1-inch
balls. On baking sheets, place dough 2 inches
apart. Flatten slightly with bottom of a glass dipped
in sugar.
- Bake each batch for 8 to 10
minutes or until lightly browned.
- Cook cookies on wire racks.
- Garnish (if desired).
