Southern Italian Club Sandwich
Southern Home CookingMakes 4 servings

Baking Time: 6 min.

Ingredients:

  • 1/2 - Italian bread loaf (16-ounces)
  • 1/4 - cup Italian dressing
  • 1/3 - cup shredded Parmesan cheese
  • 1/2 - cup mayonnaise
  • 1/2 - cup mustard
  • 1/2 - thinly sliced Genoa salami
  • 1/2 pound thinly sliced mortadella or bologna
  • 4 - slices (1-ounce) provolone cheese
  • Romaine lettuce leaves
  • 3 - plum tomatoes (sliced)
  • 8 - bacon slices (cooked and cut in half)
  • Pimiento-stuffed green olives (garnish)

Directions:

Preheat oven to 375° F.

  1. You want to cut bread diagonally into 12 (1/4-inch thick) slices.  Arrange on a baking sheet.
  2. Brush slices evenly with Italian dressing, and sprinkle with Parmesan cheese.
  3. Bake for 5 to 6 minutes or until lightly toasted.
  4. Spread mayonnaise and mustard on untoasted sides of bread slices.
  5. Layer 4 bread slices, mayonnaise side up, with salami, mortadella, and provolone.
  6. Top with 4 bread slices, mayonnaise side up.  Layer with lettuce, sliced tomato, and bacon.
  7. Top with remaining 4 bread slices, mayonnaise side down.
  8. Cut sandwiches in half, and  secure with wooden picks.  
  9. Garnish with olives if desired.
