Southern Home CookingRock Gap Pineapple Yams
Makes 4 servings

Prep Time: 5 min.
Cooking Time: 10 min.

Ingredients:

  • 4 - Tablespoon butter

  • 3 - Tablespoon brown sugar

  • 2 - Tablespoon light cream

  • 4 - slices pineapple

  • 2 - cup mashed cooked yams (or sweet potatoes)

  • 1/4 - cup milk

  • 1/2 - teaspoon salt

  • 1/2 - teaspoon pepper

Directions:

  1. Into a small saucepan, add 2 tablespoons butter and brown sugar. 

  2. Over low heat, blend. 

  3. Stir in the cream. 

  4. Now add a slice of pineapple at a time, turning so that you glaze both sides. 

  5. Remove pineapple slices to a heated plate or thermal container.

  6. In the saucepan, add the yams, milk, 2 tablespoons butter, salt, and pepper. 

  7. Beat the ingredients until they become fluffy. 

  8. Now spoon ingredients over pineapple slices and serve.
