Smoky Mashed Potato Bake

Prep Time: 50 min.
Cooking Time: 30 min.
Baking Time: 30 min.

Ingredients:

  • 3 - garlic cloves (minced)
  • 1 - teaspoon olive oil
  • 3-1/2 - pounds new potatoes (cut into 1-inch pieces)
  • 3/4 - cup (3-ounces) shredded smoked Gouda cheese (divided)
  • 1 - cup fat-free half-and-half
  • 2 to 3 - Chipotle peppers in adobo sauce (minced)
  • 1/2 - cup light margarine
  • 1/2 package (8-ounces) fat-free cream cheese (softened)
  • 1/4 - teaspoon salt

Directions:

  1. In you skillet coated with cooking spray, Sauté garlic in hot oil over medium heat for 2 to 3 minutes or until tender.  Set aside.
  2. In a Dutch oven, cook potatoes in boiling water to cover 30 minutes or until tender.  Drain.

Preheat oven to 350° F. Coat 9x13 baking dish with cooking spray.

  1. In a large bowl, mash potatoes.  Stir in garlic, 1/4-cup Gouda cheese, half-and-half, Chipotle peppers, margarine, cream cheese, and salt.
  2. Spoon your potato mixture into the baking dish.  Sprinkle with remaining 1/2-cup Gouda cheese.
  3. Bake for 30 minutes or until cheese is melted.
