Black Kettle Soup

You donít have to use an old Kentucky black kettle to make this soup, but it helps.

Makes 10 servingsSouthern Home Cooking

Prep Time: 30 min.
Cooking Time: 3 hours
Total Time: 3 hours and 30 min.

Ingredients:

  • 1 - gallon water

  • Veal shin

  • Couple of alligators and bit of rattlesnake (or 1 dressed fowl and 1/4 pound salt pork if gator and snake are not available)

  • 1 - cup rice, okra, diced potatoes, corn, chopped tomatoes, and/or chopped onion.

  • Flour and water to taste

  • Salt and pepper to taste

  • 1 - Tablespoon Worcestershire sauce

  • 1 - cup currant jelly (optional)

Directions:

  1. Fill a 1-gllon pot or kettle with water.  Add gator and snake and over. Boil for 2 hours, skimming from time to time.

  2. Add rice, okra, diced potatoes, corn, chopped tomatoes, and/or chopped onion.  Continue to boil for 1 hour.

  3. Thicken with flour and water.  Season with salt, pepper, and Worcestershire sauce.  Currant jelly is optional. Stir and serve.
