Charleston She-Crab Soup

You may not find enough female crabs with eggs at the market.

Makes 4 servingsSouthern Home Cooking

Prep Time: 15 min.
Cooking Time: 55 min.
Total Time: 1 hr. and 5 min.

Ingredients:

  • 1 - dozen blue-claw she-crabs, (or 1/2 pound crab meat)

  • 1 - Tablespoon butter

  • 2 - small onion, chopped

  • 1 - teaspoon salt

  • 1/2 - teaspoon pepper

  • 2 - cups milk, scalded

  • 2 - teaspoon Worcestershire sauce

  • 1 - Tablespoon flour blended with 1 Tablespoon butter

  • 1 - Tablespoon butter

  • 1 - Tablespoons sherry

  • 1/2 - cup heavy cream

Direction:

  1. Steam or boil the crabs about 20 minutes or until pink-tinted. Remove the eggs and set aside. Pick the meat from the shells.

  2. Put the picked meat and eggs into the top section of a double boiler along with the butter and flour roux, onions, salt, and pepper. Simmer for 5 minutes, then stir in the milk and Worchester sauce.

  3. Add he sherry and simmer for 30 minutes. Remove from heat, pour in the cream, stir, and serve
