Casserole de Cortez
Makes
8 servings

Baking Time: 20 min.
Ingredients:
- 1 - pound ground beef
- 1/2 - red onion, chopped
- 1 - teaspoon salt
- 1/4 - teaspoon ground black pepper
- 1 - can (8 – ounces) kernel corn,
drained
- 1 - can (4 - ounces) roasted diced
green chiles
- 1 - can (10 –1.2 - ounces cream
of mushroom soup
- 8 - tortillas (corn or flour)
- 4 - ounces Cheddar cheese, shredded
- 4 - ounces Monterey Jack cheese,
shredded
Directions:
Preheat oven to 350º F. and lightly
grease a 2 - quart casserole.
- In a 10 - inch skillet at medium
heat, brown the beef and onion. Then add the salt and
pepper.
- Next, add the corn, green chiles
and mushroom soup. Mix ingredients well.
- In the casserole dish, layer in a
tortilla shell, add the ground beef mixture, and then
the cheese.
- Repeat steps until the top with the
cheese ending on top.
- Bake for 20 minutes or until brown.
