Casserole de Cortez
Makes 8 servings

Prep Time: 10 min.
Baking Time: 20 min.

Ingredients:

  • 1 - pound ground beef
  • 1/2 - red onion, chopped
  • 1 - teaspoon salt
  • 1/4 - teaspoon ground black pepper
  • 1 - can (8 – ounces) kernel corn, drained
  • 1 - can (4 - ounces) roasted diced green chiles
  • 1 - can (10 –1.2 - ounces cream of mushroom soup
  • 8 - tortillas (corn or flour)
  • 4 - ounces Cheddar cheese, shredded
  • 4 - ounces Monterey Jack cheese, shredded

Directions:

Preheat oven to 350º F. and lightly grease a 2 - quart casserole.

  1. In a 10 - inch skillet at medium heat, brown the beef and onion. Then add the salt and pepper. 
  2. Next, add the corn, green chiles and mushroom soup. Mix ingredients well.
  3. In the casserole dish, layer in a tortilla shell, add the ground beef mixture, and then the cheese. 
  4. Repeat steps until the top with the cheese ending on top. 
  5. Bake for 20 minutes or until brown.
