Vultee Arch Beef Casserole
Makes 8 servings

Prep Time: 15 min.
Cooking Time: 20 min.

Ingredients:

  • 1 - pound ground beef
  • 1/2 - onion (chopped)
  • 1/4 - teaspoon salt
  • 1/8 - teaspoon pepper
  • 1 - can (8 ounces) whole kernel corn, drained
  • 1 - can (4 ounces) diced green chiles
  • 1 - can (10-1/2 oz.) cream of mushroom soup
  • 8 - ounces Cheddar cheese, shredded

Directions:

Preheat oven to 350° F. and grease a 2 quart casserole dish.

  1. In a large skillet on medium to high heat, brown ground beef and onion. Add the salt and pepper. 
  2. Next, add the corn, green chiles and mushroom soup and mix.
  3. Layer the casserole, beginning with the tortillas, meat-corn mixture, and cheese. 
  4. You want the cheese to be the top layer. 
  5. Place in oven and bake for 20 minutes or until brown and bubbly.
