Pichola

Makes 4 servings

Prep Time: 20 min
Cooking Time: 1 hr + 30 min

Ingredients:

  • 1     pound fresh lean beef, cubed
  • 1     onion, chopped
  • 2     cup tomatoes, fresh or canned
  • 1     teaspoon salt
  • 2     Tablespoon chili powder
  • 1/2  cup water
  • 1     can (number 2) hominy

Directions:

  1. Brown the pork or beef cubes and onion in a heavy skillet. 
  2. Add the tomatoes, salt, chili powder, and water. 
  3. Turn down the heat to a simmer, cover the skillet, and cook 1 hour or until meat is soft. 
  4. Add the hominy, cook 30 minutes longer, and serve in bowls.
